Chicken with Fresh Herbs and Garlic

A whole chicken can be roasted on a spit on the barbecue. This marinade keeps the -flesh moist and delicious and the fresh herbs add summery -flavours.

Ingredients

  • 1.75kg free-range chicken
  • finely grated rind and juice of 1 lemon
  • 1 garlic clove, crushed
  • 30ml olive oil
  • 2 fresh thyme sprigs
  • 2 fresh sage sprigs
  • 90ml unsalted butter, softened
  • salt
  • ground black pepper

Method

Step 1

Season the chicken well. Mix the lemon rind and juice, crushed garlic and olive oil together and pour them over the chicken. Leave to marinate in the fridge for at least 2 hours.

Step 2

Place the herbs in the cavity of the bird and smear the butter over the skin. Season well. Cook the chicken on a spit on the barbecue for 1 ½-1 ¾ hours, basting with the marinade, until the juices run clear when the thigh is pierced with a skewer. Leave the bird to rest for 15 minutes before carving.
