Piquant Pork Chops

Ingredients

  • 1 lime, juice only
  • 2 tsp honey
  • 1 tbsp red wine vinegar
  • 75g unsalted tomato paste
  • 1 tsp allspice
  • freshly ground black pepper
  • 4 pork loin chops, trimmed of fat

Method

Step 1

Mix the lime juice, Tabasco sauce, vinegar, tomato paste, allspice and some freshly ground black pepper together in a large bowl.

Step 2

Add the pork chops, and turn them so that they are evenly coated with the marinade. Place the chops in the refrigerator and leave them to marinate for 8 hours, or overnight.

Step 3

Remove them from the refrigerator about an hour before you plan to cook them. Lightly oil the barbecue rack, and cook the pork chops over hot coals for about 6 minutes on each side, bast­ing them with any remaining marinade.
