In the eastern Mediterranean, halloumi cheese is often served grilled or fried for breakfast or supper. In this recipe it’s tossed with sweet, juicy grapes which complement its distinctive flavour.
Ingredients
- 150g mixed green salad leaves
- 75g seedless green grapes
- 75g seedless black grapes
- 250g halloumi cheese
- 30ml olive oil
- fresh young thyme leaves or dill, to garnish
- For the Dressing:
- 60ml olive oil
- 15ml lemon juice
- 2.5ml caster sugar
- 15ml chopped fresh thyme or dill
- salt
- ground black pepper
Method
Step 1
To make the dressing, mix the olive oil, lemon juice and sugar together in a bowl. Season well with plenty of salt and black pepper. Stir in the chopped fresh thyme or dill and set aside.
Step 2
Toss together the mixed green salad leaves and the green and black grapes, then transfer to a large serving plate or salad bowl.
Step 3
Slice the halloumi cheese. Brush the slices with olive oil and cook briefly over a medium barbecue, or pan-fry on the stove, until golden, turning once.
Step 4
Arrange the cooked cheese over the salad. Pour over the dressing and garnish with thyme or dill leaves.
