Ingredients:
For the Rub:
– 2 tbsp smoked paprika
– 1 tbsp chili powder
– 1 tbsp cayenne pepper (adjust for heat preference)
– 1 tbsp garlic powder
– 1 tbsp onion powder
– 1 tbsp ground cumin
– 1 tbsp ground coriander
– 1 tbsp kosher salt
– 1 tbsp black pepper
– 2 tbsp brown sugar
For the Chicken:
– 1 whole chicken (about 4-5 lbs)
– 2 tbsp olive oil
– 1 can of beer (330ml, preferably a light lager)
– 1 tbsp barbecue sauce (optional, for glazing)
Instructions:
1. Prepare the Rub: Mix all the rub ingredients in a bowl until well combined.
2. Prep the Chicken: Pat the chicken dry with paper towels. Rub olive oil all over the skin, then generously coat with the spice rub, ensuring it gets into all the crevices.
3. Set Up the Beer Can: Open the beer and take a few sips (or pour out about a third). Place the beer can upright on a baking tray or grill.
4. Mount the Chicken: Carefully lower the chicken onto the beer can so it sits upright.
5. Cook:
- Grill: Set up indirect heat at medium-high and cook for about 1 hour, checking occasionally.
6. Optional Glaze: Brush with barbecue sauce in the last 10 minutes for extra caramelization.
7. Rest & Serve: Let the chicken rest for 10 minutes before carefully removing the beer can. Carve and enjoy!
This method ensures juicy, smoky, and spicy chicken with crispy skin. Serve with roasted potatoes or grilled veggies for a complete feast!
